Method
 

Step 1: Cook the Chorizo
  1. Heat a skillet over medium heat. Add the chorizo and cook until fully browned, breaking it apart into small pieces.

  1. In another pan, lightly heat the tortillas in a bit of oil until soft and flexible.

  1. Add cooked chorizo and shredded cheese between two tortillas, pressing them lightly.

  1. Place the assembled Chavindecas back onto the skillet and cook until the cheese melts and the tortillas turn lightly golden.
