Step 1: Cook the Chorizo
- Heat a skillet over medium heat. Add the chorizo and cook until fully browned, breaking it apart into small pieces.

Step 2: Warm the Tortillas
- In another pan, lightly heat the tortillas in a bit of oil until soft and flexible.

Step 3: Assemble the Chavindecas
- Add cooked chorizo and shredded cheese between two tortillas, pressing them lightly.

Step 4: Melt the Cheese
- Place the assembled Chavindecas back onto the skillet and cook until the cheese melts and the tortillas turn lightly golden.

Step 5: Add Fresh Toppings and Serve
- Top with chopped onion, cilantro, and lime juice. Serve warm and enjoy.
