Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 cup sour cream
  • 8 oz cream cheese
  • 2 cups shredded Mexican blend cheese
  • 3 cups lightly crushed nacho cheese tortilla chips
  • 1 small onion chopped
  • 2 garlic cloves minced

Step 1: Cook the Beef
  1. In a large skillet over medium heat, cook the ground beef until browned. Add the chopped onion and garlic, and cook for another 2–3 minutes until fragrant. Drain excess grease.

  1. Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and corn. Let everything simmer for about 5 minutes so the flavors blend beautifully.

  1. In a mixing bowl, combine sour cream and softened cream cheese. Mix until smooth and creamy. This layer adds that rich, comforting texture we all love.

Step 4: Layer the Casserole
  1. Preheat your oven to 350°F. In a greased 9×13-inch baking dish, spread half of the crushed tortilla chips. Add half of the beef mixture, then spread half of the cream mixture, and sprinkle cheese on top. Repeat the layers once more.

Step 5: Bake to Perfection
  1. Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly. Let it rest for 5–10 minutes before serving so it sets nicely.
