Step 1: Melt the Butter
- Place your saucepan over medium heat and melt the butter. This helps prevent the cheese from sticking and adds a little richness to the base.

Step 2: Add Milk and Cheese
- Pour in the milk and gradually add the cubed white American cheese. Stir constantly so the cheese melts smoothly without clumping.

Step 3: Stir in Monterey Jack
- Add the shredded Monterey Jack cheese and keep stirring until the mixture becomes silky and creamy.

Step 4: Add Tomatoes and Spices
- Mix in the diced tomatoes with green chilies, chopped jalapeño, garlic powder, onion powder, cumin, and salt. Let everything simmer for 3–5 minutes.

Step 5: Garnish and Serve
- Turn off the heat and stir in fresh cilantro if using. Pour into a serving bowl and serve warm with tortilla chips.
