Ingredients
  

  • 1 lb smoked sausage sliced
  • 1 lb chicken thighs cubed
  • 1 large onion chopped
  • 1 bell pepper chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 2 tbsp Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can Rotel diced tomatoes with green chilies
  • 1 lb pasta penne or rotini works great
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Green onions for garnish

Equipment

  • Large Dutch oven or heavy pot
  • Wooden spoon

Method
 

Step 1: Sauté the Meat
  1. In a large pot, heat olive oil over medium-high heat. Add sausage and chicken. Cook until browned and cooked through. Remove and set aside.

  1. In the same pot, sauté onion, bell pepper, celery, and garlic until tender and fragrant.

  1. Stir in Rotel, chicken broth, and Cajun seasoning. Bring it to a boil.

  1. Add the pasta directly into the pot and cook until tender, stirring occasionally so it doesn’t stick.
